The second book in the series "Bee Products: Obtaining and Using" is devoted to bee honey.

The book consists of five chapters. The first chapter provides a detailed account of nectar, its collection by bees, delivery and processing into honey. The second chapter is devoted to an alternative source product - sugar and the specifics of its processing and autumn sugar feeding. Chapter three provides a detailed analysis of the various properties of bee honey from flower nectar and sugar syrup.

The fourth and fifth chapters discuss the medical aspects of honey use and provide accessible recipes using honey.

The book has five appendices, which discuss specific applied issues related to honey.
